Hawaiian Quinoa Pilaf
If you want to try meal which is full with vitamins and nutrients, this is a perfect meal for you. It is especially good during the winter, because at that time, our body needs more nutrients. This Hawaiian Quinoa Pilaf is made with Leafy Greens, Sweet Potato and coconut. If you want to serve it, for the full island experience, serve it with grilled fish and sliced pineapple.
Ingredients are:
• 2 tablespoons organic coconut oil
• 2 cups organic quinoa
• 1/4 teaspoon sea salt
• 1/2 teaspoon of black pepper
• 1 sweet potato (it must be organic, peeled and diced)
• 1 organic shallot
• 1 bunch leafy greens (organic of course)
• Juice of 1 lemon
• 1/4 cup organic macadamia nuts (you must chop them)
• 2 tablespoons shredded coconut
The first thing you must do is to toast quinoa. Then, add water and salt, reduce heat from high to low and simmer no longer than 15 minutes. Remove the pan from the heat and wait for 10 minutes. While it is cooling down, preheat your oven to 400°F, add 1 tablespoon of coconut oil to a baking sheet (you can use roasting pan as well) and put it in the oven. Add sweet potato, pepper and salt. You will have to roast this 30 minutes (potatoes must be tender and lightly browned). Remove it from the heat and wait to cool.
Next, you should heat the remaining coconut oil, and cook sliced shallot, about 5 minutes. Add leafy greens and cook it 5 more minutes. When it is done, transfer quinoa to the large bowl. Add shallot, lemon juice, greens and potatoes, stir and add chopped macadamia nuts and coconut. It is ready for serving.
